I️ accidentally bought a MASSIVE spaghetti squash and had ALL many leftovers so naturally, I️ made a shiz ton of recipes and this baby come out of the magic! Presenting: ✨cheesy butternut squash casserole ✨ 🤤

Paired this baby with some roasted brussel sprouts + sauteed mushrooms + massaged kale salad with lemon tahini drizzle + wild-caught salmon from local AZ business, Alaskan Pride Seafood!

Prep Time 15 minutes


Cooking Time 45 minutes

Yields 4-6 servings


Ingredients

  • 1 large spaghetti squash

  • 1 can coconut milk

  • 2-3 T nutritional yeast (I used Bragg's)

  • 2 tsp paprika

  • juice from half a lemon

  • 1 tsp garlic powder

  • *optional - a few drops of liquid smoke

Instructions

  1. Preheat oven to 400 F

  2. Prepare the spaghetti squash by cutting it in half (check the video below for how to prep the squash) and scooping out the seeds with a spoon or ice cream scoop.

  3. Coat the flesh of the squash in a little bit of oil and salt. Place squash face down on a baking sheet and bake for 35-40 minutes. (You will be able to make an indent with your finger on the rind when it is done cooking)

  4. Once squash is cooked, allow to cool and then remove the flesh with a fork. It should come out of the skin easily.

  5. Reserve half the squash and combine the other half in a blender with the coconut milk, nutritional yeast, paprika, lemon juice, garlic powder, and liquid smoke if using.

  6. Blend until smooth, season with salt and pepper to taste.

  7. Coat the other half of the squash with the sauce and stir to combine. Serve and enjoy!
